In addition to its kashar cheese and honey, Kars has a rich and colorful cuisine.

Some primary cuisines exclusive to the region are: umaç halva, apple stuffed food , hörre (flour) soup, evelik made with a plant named as evelik, ekmek aşı made by pouring hot oil and yoghurt on the bread, pişi, kuymak, hengel (patty), haşıl made with cracked wheat, bozbaş, piti, which is a kind of soup made with bone-in-meat and meat pieces, rice made with sultana and Kars patty.
